could three projectors shoot 80" long screens if they are 90 degree from each other? What would that look like? What angle is optimum?

My assumption by three screens you mean their surfaces are flat? Angle really doesn't matter on flat screens. Radius comes into play primarily with depth of focus on continuous curve screens.

The lens throw of the projectors you use will dictate a lot about how the screen design can be done. You're really held hostage to the limitations of lens throw. flat surfaces at 90 degrees is possible, however it's nothing I've ever done personally. If you're talking flat screens, I'd personally only suggest 45 degree angle per screen much like how triple LCD users configure their screens. That is purely a personal preference though. Use projector central's projector calculator to work up what distance would be capable with the particular projectors you end up wanting. I think in many cases you'll be surprised just how much lens throw effects your projector purchase decisions.
