I had forgotten that eyefinity required all three monitors to be the same resolution. Is nvidia surround the same way?

Yes, for 2D surround, all displays must have a common resolution, refresh rate, and sync polarity, and for 3D surround, all displays must be the same make and model 3D Vision-Ready LCD.

Well, for strategy games I would say go for a higher resolution monitor, but for FPS/racing/flying/etc, I think Eyefinity is better, if the game supports it ok.
You also need to consider costs - one 30" monitor will cost you as much as 3x 24" (1920x1200 IPS; FHD TN are half the price). You already have Eyefinity, so I wouldnt switch to a single monitor if I were you.

You cannot add portrait monitors to a landscape eyefinity setup, even if everything matches perfectly. If you could, the optimal setup would be 30" + 2x 1600x1200 in portrait. Maybe someday they will add this support, but I wouldnt count on it. You can of course set extended desktop with nonmatching monitors, tho. Good for work, but useless for games.

What about 3 x 30" @ 2560 x 1600 monitors? Would 2 x 580's handle something like that for flight sims like FSX? Be expensive, and much better than 3 x 24" units running @ 1920 x 1200?

I'd say 2 580's should be fine I run 3 3-"rs on a single 5870.
