Is there a way to properly determine the correct angle for the side screens for a triple monitor display? How is this angle then set up into the monitor config? Just a standard protractor?

Whatever you're most comfortable with. Me, I set up my screens to the are facing me straight on when i turn my head. This results in them being at about 25 degrees.

Simply put them as they look comfortable.
You could use the distance from viewpoint to center monitor and monitor size thus calculate the correct angle so that you look straight onto them.
But its easier to just put them as you like ^^

Here is a GeoGebra application that will help you calculate the angle of your monitors so that you can match them to the FOV. FOV and angle monitor are dependent of one another to have the "correct" angle.

First download GeoGebra.

Then download this program for GeoGebra or "Calculator" for it. I got this off of the iRacing forums years ago when I was first getting into triple monitors. Since I cannot attach to post I will host on my cloud account.
