Does it really matter that much? We're likely to be able to set the correct FOV on our own and all will be well.

Seems that there are quite a few responses along the lines of, "I use a really high FOV."

This is a good thing. ;)

No one from Epic has commented on the question, (at least not as far as I have seen). Only the members have said; "UT2004 supported true widescreen, UT3 will as well."

What concerned me is how quick the questions were deleted from the forums.
